Meanwhile, peel the celery from hard fibers, take a Korean carrot knife or use a regular knife to cut the stems lengthwise into thin noodles. Cut the olives into slices, mix with celery, add squid (after draining the brine from them) and olive oil. Let it brew a little. Stir again.

Serve in tall salad bowls like bowls or on square plates.

Cheese plate

You will need:

  • Cheese such as Roquefort, Dor Blue or Sapphire - 300 grams,
  • A bunch of white seedless grapes,
  • Skewers for serving canapés.

Slice cheese cubes of 1 centimeter, string first a grape on a skewer, then a piece of cheese. Serve on a square plate, garnishing the corners with cherry roses.

Red fish rolls

For two servings you will need:

  • Packaging of sliced ​​fish (salmon or trout) - 150 grams;
  • Packaging of curd cream cheese - 200 grams,
  • Lemon juice,
  • Dill or basil – 1/3 bunch.

Finely chop the greens, mix with cheese, add a few drops of lemon juice if fish If it is not very salty, then the mixture can be salted. Mix everything well. Cut the onion into medium half rings, fry in a mixture of oils until transparent and add tomato paste (or previously peeled tomatoes and cut into small pieces). If the pasta or tomatoes are sour, add a teaspoon of sugar. Stir and simmer for 3-4 minutes.

Add the onion to the meat, mix thoroughly and place the pan on low heat. Stir occasionally and make sure the liquid does not boil away. Add boiling water or broth if necessary. Cook the meat for an hour.

Then put prunes and dry parsley in it. Grind the greens in your hands until they form a powder. Simmer for another 40 minutes. 5 minutes before readiness, add cinnamon if desired.

2 tbsp. lemon juice,

1 tsp apple juice,
mustard, ground red pepper, salt - to taste.

Preparation:
Wash the strawberries, peel and cut into slices. Sort the salad, wash, dry and tear into small pieces. Cut the onion into thin half rings. Pour half the lemon juice over the prepared fish, salt and pepper. Fry the fish pieces on both sides. Combine the remaining lemon juice with 1 tbsp. water, apple juice, mustard and olive oil, add salt and pepper, stir. Place the lettuce, strawberries and onions on a dish, pour over the sauce, and place the fried fish on top.

250 large shrimps,
2 tbsp. olive oil,
1 fresh hot pepper without seeds.
Sauce:
1 clove of garlic,
1 tsp chili powder,
1 tsp paprika,
¼ tsp. cumin,
1 lime,
4-5 tbsp. mayonnaise,
salt, ground black pepper - to taste.

Preparation:
Mix raw shrimp with oil and ground pepper and fry them in hot vegetable oil on both sides. Mix 1 tbsp. olive oil, garlic, chili, paprika, cumin, lime juice and mayonnaise, salt and pepper. Serve the cooked shrimp with a fresh vegetable salad, crusty bread and hot sauce.

An excellent dinner made from inexpensive ingredients, the recipe for which I want to offer you is one of the varieties of khanum (an oriental dish so popular in many countries). The only difference from the classic version is that there will be no meat in the filling: only vegetables and spices.

But this does not mean that the dish will turn out bland: it is nourishing, juicy and aromatic. I’ll tell you a little secret on how to achieve this: an amazing sauce made from simple ingredients will come to the rescue. By the way, the classic khanum can be prepared in the same way: the sauce will also go well with it.

Required ingredients:

  • 800 grams of any unleavened dough;
  • 800 grams of potatoes;
  • 200 grams of onions;
  • one tablespoon of salt;
  • one teaspoon of ground cumin;
  • one teaspoon ground black pepper.

For the sauce:

  • two tablespoons of tomato paste;
  • 100 grams of onions;
  • 100 grams of carrots;
  • one teaspoon of salt;
  • one tablespoon of wheat flour;
  • 500 milliliters of water;
  • dill and onion rings for sprinkling.

How to cook a great dinner using inexpensive ingredients

  1. Peel the potato tubers, wash them and grate them into strips on a Korean vegetable grater. If you don't have one, just cut the potatoes into thin strips.
  2. Peeled onions are cut into thin half rings.
  3. Place the potatoes and onions in a bowl, add salt, black pepper and ground cumin. Mix everything thoroughly with your hands.
  4. need to be prepared in advance: you can use your favorite recipe or look at the unleavened dough recipe on our website.
  5. We form the dough into a sausage, and then cut it into equal parts. We turn each part into a flat cake, roll them into thin circles.
  6. Grease each circle of dough, spread the filling over the entire surface, and roll it into a roll.
  7. We form a snail from the roll, press it down a little on top. Immediately place on the sheets of the pressure cooker (they need to be greased with oil) and set to cook for 45 minutes (after the water boils).
  8. At this time, let's make the sauce ourselves. Pour vegetable oil into a cauldron, heat it and add finely chopped onions.
  9. After the onion is slightly fried, add the carrots, grated on a coarse grater.
  10. Fry everything together for about three minutes, add tomato paste to the vegetables: mix and fry over high heat for another 3 minutes.
  11. Then add wheat flour, mix and fry for about a minute.
  12. Pour in water, salt and cook over low heat for 15-20 minutes. Once the sauce thickens, it can be removed from the heat.
  13. Take another bowl, put chopped dill and onion cut into thin rings into it. Mix everything.
  14. After the khanum is cooked, take a deep pan and put a plastic bag inside.
  15. We put filled flat cakes in it in layers, pour plenty of sauce over each layer. We tie the cellophane on top and close the pan with a lid. Leave for a while so that the dish is soaked in the sauce.

Cuisine of the countries of the Balkan Peninsula(Albania, Bulgaria, Bosnia and Herzegovina, Greece, Macedonia, Moldova, Romania, Serbia, Turkey, Croatia and Montenegro) is rather a generalized concept on a territorial basis. The dishes of these eastern countries differ significantly! Although there is still one common feature - it is high in calories, which ensures satiety.
